80% of our business is supplied under the individual retailer brands, as an own label product, only 20% (mainly outside the UK) is supplied under one of our own brands such as Farne or Thomas Balantyne.

The end product's taste is defined by various factors such as:

  • the salt and sugar level at the beginning of the process
  • the marinade used for curing the raw fillet
  • the wood chips used for smoking (anything from oak, beech, apple or any other source which develops a distinct smoke aroma and flavour)
  • the smoking time anything from 7 up to 48 hours
